Context behind the change

Upgrade Node.js version from 22.14 to 24 in Dockerfiles and package.json

How has this been tested?

Installed all dependencies.
Deployed locally and completed some escrows.
Ran lint and unit tests.
Built all packages to check everything is building fine.

Release plan

Run nvm install 24 && nvm use if you have nvm installed. Otherwise install Node 24 via your preferred manager.

Potential risks; What to monitor; Rollback plan

Check that all packages are running fine.

@flopez7 as part of release plan we will need to also update NODE_VERSION env variable for all affected services on Render (maybe some extra step on Vercel as well, haven't checked it, so please take a look)
