Checkboxes were falling back to the original purple colour and not using the primary colour from the App's theme.
Updated DataTable2 library to a version that includes checkbox customisation, and implemented parameters that pull from the current MaterialApp's theme.
This allows CheckboxTheme to be passed from the App into the DataTable through the Theme.
