Documentation Change Details

• Changes Summary: Went through and found all instances of “•” and “▸” and replaced them with "-".
• There are cases where some of the changes occur inside of tables and mermaids. Will ask team for extra info on if we want these to change, but made the change preemptively as I assume the answer will be yes in these cases.
