Hardcoded ServerName in httpd.conf should be removed.

It looks like it's a hangover from a early, misguided, attempt to include certificates in the docker image.

Clearly an incorrect ServerName is not a fatal issue so, if a value is needed, an obviously dummy one can be provided.
