Get the contact email from helm values instead of hardcoding it

For places where we suggest our users contact us by email, we currently use either the variable RenkuContactEmail or hardcode the email address hello@renku.io.

We should always use RenkuContactEmail, but get that value from helm values instead of a hardcoded string.
